St. Austell (uttales s'norsel, verdslige sogn i utkanten som tilhører byen.
Byen var det første stedet i Europa hvor leire til produksjon av porselen ble tatt ut, og det var denne industrien som førte til at den begynte å vokse. Leiren ble sendt til Charlestown, som er nærmeste havn. Det tas fortsatt ut porselensleire, men siden 1980-årene har næringen hatt nedgangstider.
Turisme har blitt en stadig viktigere næringsvei. Det som særlig trekker tilreisende er strendene i nærheten, og Eden Project, Cornwall|Eden Project, biosfærer hvor man har planter fra hele verden, i et av de nedlagte leirtakene.
